THE MAX Challenge Compliant Recipes - Lime Shrimp and Avocado

Ingredients: 4 (9.5 oz.) ctn. jumbo cooked shrimp, peeled deveined, chopped 2 limes, juice and pulp 1 medium tomato, diced 1 avocado, diced 1 jalapeño, seeds removed, diced fine 1/4 c. chopped red onion 1 tsp. extra virgin olive oil 1 T. chopped cilantro Sea salt and fresh ground pepper to taste Directions: In a small bowl, combine red onion, lime juice, extra virgin olive oil, pinch of salt and pepper. Let them marinate at least 5 minutes to mellow the flavor of the onion. In a large bowl, combine chopped shrimp, avocado, tomato, and jalapeño. Combine all the ingredients together, add cilantro and gently toss. Adjust salt and pepper to taste. Serve with brown rice tortilla chips and enjoy! Serves 4 www.themaxchallenge.com
