THE MAX Challenge Compliant Recipe Apple Banana Oat Cookies Ingredients: 2 cored and peeled apples cut into pieces 3 T. water 3 ripe medium bananas, mashed 1/3 c. whole oats 1/3 c. unsweetened almond milk 1 tsp. cinnamon optional: 1 tsp. vanilla extract Directions: Make applesauce ahead of time. Simmer chopped 2 cored and peeled apples in 3 T. of water until soft then set aside. (Yields 1/3 cup applesauce) Combine bananas, applesauce, almond milk, vanilla and cinnamon until completely mixed. Add oats and stir. Drop by tablespoon on cookie sheet covered with parchment paper. Bake at 350° for 15-20 minutes until slightly golden brown on top. Makes about 20 cookies.
