Thank you for your support. ----------------------- Mini Scales: https://amzn.to/48FoW8q Baking Beans: https://amzn.to/49ca1CU 00:00 Intro 00:06 Brown Butter Pastry 02:40 Pecan Pie Filling [Ingredients] For a 20 cm tart tin ◻Pastry: 100 g Unsalted Butter to yield 75 g Brown Butter 50 g Icing Sugar 30 g Whole Egg 125 g AP Flour 25 g Almond Powder ◻Pecan Pie Filling: 70 g Pecans 2 Whole Eggs 35 g Double Cream 20 g AP Flour 1 tsp Vanilla 1 g Salt 50 g Golden Syrup 130 g Dark Brown Sugar 70 g Unsalted Butter Pecans to top [Recipe] 1. Brown the butter in a saucepan and let cool till softened 2. Cream with icing sugar 3. Mix in the egg 4. Sift in the flour and almond powder 5. Roll out and refrigerate for 3 hours 6. Roll out to 4mm and form into the tart pan 7. Dock the surface and weigh down with baking beans 8. Bake for 12 minutes at 170 C (338 F) 9. Remove the beans and bake again for 3 minutes 10. Whisk together the eggs, flour, cream, salt, vanilla and golden syrup 11. Melt the butter and sugar until glossy 12. Stream the sugar mix into the main mix whilst whisking 13. Fold in the chopped pecans 14. Pour into the tart base and top with pecans. 15. Bake at 150 C (300 F) for 26 - 30 minutes until the centre registers 93 C (200 F) #baking #cooking #pie
