Japchae (Stir-fried Glass Noodles) Japchae is one of the most beloved traditional dishes among Koreans. Made by stir-frying a variety of ingredients such as meat, mushrooms, vegetables, and sweet potato noodles, this dish is not only healthy but also visually appealing and delicious. Today, in celebration of Chuseok (Korean harvest festival), I will be making Pyongyang-style japchae learned from my mother. The key points when making japchae are to preserve the vibrant colors of the vegetables, cook the meat until tender, be careful not to overcook or break the noodles, and season the dish appropriately. Ingredients (Serves 5) • 100g korean cabbage • 300g Pork • 300g Sweet potato noodles (dangmyeon) • 50g Onion • 50g Spinach • 50g Red and yellow bell peppers (each) • 50g Shiitake mushrooms • 50g Oyster mushrooms • 14g Salt • 40g Soy sauce • 20g Sugar powder • 10g Mirin (cooking wine) • 60g Cooking oil • 20g Sesame oil • 20g Green onion • 20g Garlic • 10g Sesame seeds • 2g Black pepper powder Preparation Method 1. Wash the cabbage, onion, bell peppers, shiitake mushrooms, and oyster mushrooms thoroughly, then cut them into long strips. Lightly salt the cabbage, then squeeze out the excess water. 2. Slice the pork into long strips, then marinate it well with cooking wine, soy sauce, sesame oil, 3g of salt, minced garlic, sugar, and ground black pepper. 3. Prepare the seasoning sauce by mixing 5g of salt, soy sauce, sugar, ground black pepper, sesame oil, and minced green onions and garlic. 4. Wash the spinach thoroughly, blanch it in 2% salted water, then immediately cool it in ice water and squeeze out the excess water. 5. Boil the glass noodles for about 9 minutes, cut them into bite-sized lengths, and mix evenly with the prepared seasoning sauce. 6. Heat cooking oil in a pan, stir-fry the napa cabbage, onion, bell peppers, spinach, and shiitake mushrooms separately, sprinkling the remaining salt little by little. Place them in a large bowl. 7. Quickly stir-fry the marinated pork over high heat, then add it to the large bowl with the stir-fried vegetables. 8. Stir-fry the glass noodles over high heat until most of the moisture evaporates, then place them in the large bowl. 9. Mix all the stir-fried ingredients in the large bowl evenly. 10.
