Japchae - Korean glass noodle stir fry

Here I cook a delicious Korean glass noodle dish called Japchae. Here’s the recipe Ingredients Protein 1 lb tri-tip steak, thinly sliced against the grain ¼ cup Japanese BBQ sauce (for marinade) Noodles 8 oz glass noodles (dangmyeon or sweet potato noodles) Vegetables 1 portobello mushroom, sliced 1 green bell pepper, sliced 1 red bell pepper, sliced 1 yellow bell pepper, sliced 1 small onion, sliced 1 carrot, julienned 3 cloves garlic, minced 2 cups fresh spinach Egg Garnish 2 eggs Pinch of salt Neutral oil for the pan Seasoning & Finish Sesame oil (to taste) Sesame seeds (to taste) Extra Japanese BBQ sauce (to taste) Sliced green onions Instructions 1. Marinate the Beef Place the sliced tri-tip in a bowl and coat with ¼ cup Japanese BBQ sauce. Mix well, cover, and let marinate for at least 20 minutes while you prep everything else. 2. Cook the Noodles Bring a pot of water to a boil and cook the glass noodles according to package directions until tender but chewy. Drain well and set aside. 3. Cook Everything Separately (This matters. Japchae is about balance, not chaos.) Egg Omelet: Beat eggs with a pinch of salt. Cook in a lightly oiled pan into a thin omelet. Roll it up, slice into ribbons, and set aside. Spinach: Quickly sauté or blanch until just wilted. Squeeze out excess moisture and set aside. Vegetables: In a large pan or wok, sauté each vegetable separately with a small amount of oil: Onion Bell peppers Carrot Portobello mushroom Add garlic at the very end so it doesn’t burn. Set everything aside. Tri-Tip: Sear the marinated beef in a hot pan until just cooked through and slightly caramelized. Remove and set aside. 4. Assemble the Japchae In a large mixing bowl, add: Cooked glass noodles All cooked vegetables Spinach Tri-tip Add: Additional Japanese BBQ sauce (to taste) Sesame oil (to taste) Sesame seeds Put on a glove and mix thoroughly by hand, lifting and folding until everything is evenly coated and glossy. 5. Serve Transfer to a serving bowl. Garnish with: Sliced egg omelet Sesame seeds Green onions A light drizzle of Japanese BBQ sauce Sesame Seeds https://amzn.to/49HI6Lv Japanese BBQ Sauce https://amzn.to/4aUsW7M Sesame Oil https://amzn.to/4qolQxl Japchae Noodles https://amzn.to/4jHjJ4T Affiliate Disclosure: As an Amazon Associate, I earn from qualifying purchases.
