My mum's meals part 3: Japchae (aka. Korean stir-fried glass noodles) 🥕 Happy cooking, just like my mum does 🫐 Ingredients (serves 4) [main] glass noodles 400g carrot 1 onion 1 spring onion 1/2 stem garlic cloves 5 spinach 4 stems [condiments] soy sauce 2 tbs tuna extract 1 tbs allulose (or a different liquid sweetener) 1tbs black pepper salt olive or avocado oil sesame oil sesame seeds Recipe 1. wash and put aside 15 button mushrooms 2. wash and peel 1 carrot 3. peel and thinly slice 1 onion, and place in an unheated deep pan 4. use a mandolin to directly grate carrots into the same pan 5. for safety, slice the last small block of carrot as thinly as you can 6. pre-soak glass noodles in a deep dish with hot water for 10 minutes 7. add something heat-resistant to keep all noodles covered 8. thinly slice all 15 button mushrooms 9. wash and cut the ends off 4 stems of spinach 10. wash and chop 1/2 a stem of spring onion (set some aside for garnish) 11. cut off the tips of 5 garlic cloves to prepare to be minced 12. put the pan with veges on med-high heat with a drizzle of avocado oil 13. add a sprinkle of salt 14. once the onions and carrots are translucent, add in the mushrooms 15. add a little more salt and the soaked glass noodles 16. add 3 tbs of soy sauce, 1 tbs of tuna extract, 1 tbs of allulose 17. also add a sprinkle of black pepper 18. mix everything together and adjust heat to low 19. add all of the spinach, chopped spring onion and mince all 5 garlic cloves 20. once the spinach is wilted, add a drizzle of sesame oil and seeds 21. ready to serve and enjoy xx #koreanfoodrecipe #easykoreanfood #japchae #cooking #veganfood #veganrecipe #koreanglassnoodles
