This is truly a power salad! It has a super satiating base of kale, sweet potatoes, and tofu. Our dressing is almond based with lots of flavour from garlic, hot sauce, nutritional yeast, lime juice, and Dijon mustard. A perfect bite of massaged kale, roasted sweet potato, crispy tofu, avocado, and red onion is just a symphony of flavour and texture! This recipe is naturally vegan and gluten-free. To make this main course salad, you start by blending up the dressing ingredients in an upright blender. Then, we begin roasting the sweet potatoes in spices and also the tofu in the same spices, but with the addition of arrowroot and cornmeal to crisp it up. From there, you'll chop up your kale, red onion, and avocado. The kale gets a brief massage in lime juice and olive oil to tenderize it a bit.
