Kaddu Ka Khatta Himachali Dham Style: Pumpkin, also known as Kaddu in India, is a seasonal vegetable. In Himachali cuisine, Kaddu ka Khatta is a sweet and sour pumpkin curry cooked with tamarind/amchoor jaggery, and various spices. It is traditionally prepared with mustard oil in an iron Kadai (wok). Onions, ginger, garlic, and tomatoes are not used in this dish. Ingredients: Black gram/kaley , whashed/ soaked, 1 kg pumpkin/kaddu Black chana/Black Gram1 cup Tomato: 2-3 Green chilli : 2-3 Ginger: a small piece Mustard Oil: 3-4 tbsp. Spices: Fenugreek/methi dana 1 tbsp, cumin seeds1 tbsp , coriander whole: 1 tsp, Ajwain/carrom seeds 1 tsp., 1 tsp. Fennel seeds/Saunf, Bay leaf, Black cardamom 1-2 pods., Dry whole red chilli: 1-2. Mustard Oil: 3-4 Tbsp Turmeric, Red chilli, degi mirch, dhania powder, Amchoor powder Jaggery/Gud/ Shakker: 3-4 tsp
