Ingredients for cooking Cauliflower: Cauliflower - 500 gm approx. cut into florets and fully washed ¾ cup fresh curds (do not use sour curds) ¾ tsp. salt ½ tsp. turmeric powder 1 tsp. red chili powder (Kashmiri mirchi - mild – for giving bright color) ½ tsp. red chili flakes ½ tsp. garam masala / curry powder or any other masala of your choice ½ tsp. cumin seeds ½ tsp. nigella seeds Ingredients for garnishing cooked Cauliflower: 1 inch of ginger cut into julienne 2 stalks of fresh coriander leaves 1 green chili cut into small pieces Recipe for cooking Oil Free Cauliflower (Gobhi): Take the fresh curds in a mixing bowl. Add the salt, turmeric powder, red chili powder, red chili flakes and curry powder in the curds and keep the mixture aside for about 10 minutes. Heat a medium size, heavy bottom pan on high flame for one and a half minute. Add the dry spices, namely, cumin seeds and nigella seeds to the heated pan. When these whole spices start crackling, lower the flame and add the curds mixture and stir for about 2 minutes. Please pour the curds mixture carefully so that you do not burn your hands while adding to the heated pan. Add the cut and washed cauliflower florets, mix well then cover the pan and cook for about 5 minutes. Open the cover, again mix well then cover the pan again and cook for another 5 minutes. Open the cover and mix. Cover again for another 3 ~ 4 minutes or until the cauliflower florets get tender and they split easily. Dry the remaining liquid in the pan on high flame stirring continuously and then switch off the flame. Transfer the contents to a serving bowl and garnish with coriander leaves, julienne ginger and the cut pieces of green chili or garnish as per your choice.
