In this video from healing recipes, I will teach you how to make a basic DIY magic curry paste ( 맛있는인도 카레 페이스트) which is oil free, preservative free & multi-purpose. I will also teach how to prepare 5 delicious restaurant style dishes in super quick time using this magic curry paste. The DIY magic paste can be used to prepare many tasty curries in a very quick time, with or without oil and can be used by vegetarians, vegans, Jains as well as non-vegetarians. You can add the DIY magic paste to your favorite vegetables, meat, fish, chicken or eggs and prepare multiple curries using just the magic paste. In less than 10 minutes, I was able to cook the mushroom peas curry and serve it for dinner using my DIY magic curry paste. Ingredients for Magic Paste: Onions 600 grams chopped Tomatoes 600 grams chopped Green Peppers 2 nos. Mace spice 1 no. (Optional) Fresh green coriander 4 stalks Almonds about 20 nos. Cloves 6 nos. Green cardamoms 6 nos. Black cardamoms 2 nos. Cinnamon 1/2 inch Bay leaves 2 nos. Cumin powder 2 teaspoon Coriander powder 2 tablespoon Natural Red Chili powder 2 tablespoon Turmeric powder 2 teaspoon Dried fenugreek leaves 1 tablespoon Salt 2 teaspoon Procedure for Magic portion: Slightly crush the Green & Black Cardamoms. Heat the pressure cooker on high flame for about 1 or 1 1/2 minutes. When it gets well heated add bay leaves and whole spices. Add onions and tomatoes green hot peppers, fresh green Coriander, Salt, almonds, dry spices and dried fenugreek leaves. Mix well. Close the lid of the Pressure Cooker on a high flame. When the whistle of the pressure cooker is on, lower the flame to the minimum heat. Let it cook for about 20 minutes. After 20 minutes switch off the flame .. Let the Cooker get cooled completely then grind the contents in a mixture grinder. Pour the resulting paste in small containers just enough to use for one curry each time. Store all the containers in deep freezer. You can keep in deep freeze for more than one month. Once the magic portion is ready in freezer you can always make a thick creamy gravy of any of the vegetable of your choice or boiled beans, tofu or mushrooms in no time by defrosting the magic portion. Simple steps to use magic portion with a curry / curries of your choice: Take out the magic paste and thaw before use. The paste can be used for any curry with a fresh seasoning of... For oil free curry preparation: Seasoning with 1 tsp each of ginger, garlic paste and 1/2 teaspoon crushed chili flakes with 2 tablespoons of curds. For vegans curry preparation: Seasoning with 2 tablespoons water with 4-5 drops of lemon, 1 teaspoon each of garlic and ginger paste, 1/2 teaspoon of crushed chili flakes. For others who like curries with oil or clarified butter: Seasoning with 2 tablespoons of oil or clarified butter with 1 teaspoon each of ginger and garlic paste, 1/2 teaspoon of crushed chili flakes. After seasoning add the defrosted magic portion. Add the vegetables or non vegetarian item/s of your choice.. add the salt as per your taste. Add little water (as much as needed) to cook the vegetables or non-vegetarian curry / curries .. until they get tender. The curry / curries are ready for serving.
