Ingredients 2-3 large Russet potatoes (about 1.5-2 lbs) 2-3 teaspoons olive oil, vegetable oil, or other high-heat neutral oil Salt and other seasonings to taste (e.g., paprika, garlic powder, black pepper) Equipment Large pot for boiling Large bowl with ice and water for the ice bath Baking sheet Clean kitchen towels or paper towels Airtight container or freezer bag Air fryer Instructions Step 1: Prep the Potatoes Scrub the potatoes clean. You can peel them if you like, but leaving the skin on adds a nice rustic touch and some extra fiber. Slice the potatoes into even-sized sticks, about 1/4-inch to 1/2-inch thick. Uniformity is key for even cooking. Step 2: The Boiling Water and Ice Bath Bring a large pot of heavily salted water to a boil. Carefully add the potato sticks to the boiling water and blanch them for 3-5 minutes. You want them to be partially cooked, but not falling apart. While the potatoes are boiling, prepare a large bowl with an ice bath (cold water and plenty of ice). Using a slotted spoon, transfer the blanched potatoes directly from the boiling water to the ice bath. This "shocks" them, immediately halting the cooking process and helping to set their structure. Step 3: Dry and Freeze Drain the potatoes from the ice bath and spread them in a single layer on a clean kitchen towel or several layers of paper towels. Pat them very, very dry. This step is crucial for crispiness. Any remaining moisture will turn to steam and make your fries soggy. Transfer the dry potato sticks to a baking sheet in a single layer. Make sure they are not touching. Place the baking sheet in the freezer for at least 30 minutes, or up to 2 hours. Freezing the fries helps create a fluffy interior and a starchy exterior that will get extra crispy in the air fryer. You can also freeze them for later use in an airtight container or freezer bag for up to several months. Step 4: Air Fry Preheat your air fryer to 400°F for at least 5 minutes. Place the frozen fries in a large bowl. Drizzle with a small amount of oil (about 1-2 teaspoons per potato) and toss to coat. Arrange the fries in a single layer in the air fryer basket. You will likely need to cook in batches to avoid overcrowding. Overcrowding the basket will steam the fries instead of crisping them. Cook for 15 minutes, shaking the basket halfway through to ensure even cooking and browning. Cooking time will vary depending on the thickness of your fries and your specific air fryer model. Once the fries are golden brown and crispy to your liking, remove them from the air fryer. Step 5: Season and Serve Immediately transfer the hot fries to a clean bowl. Sprinkle with salt and any other seasonings you desire. Toss well.
