Baked Vegan Sweet Potato Falafel are easy to make, healthy, oil-free, rich in protein and delicious. Add falafel to your salad, burger, wrap or sandwich for a delicious vegan meal! RECIPE (12 falafels) 3/4 cup mashed sweet potato (150 g) 1 cup canned chickpeas (160 g) 1-2 tbsp chickpea flour 1/2 tsp curry powder 1/2 tsp cumin 1/4 tsp cayenne pepper 1 handful fresh parsley 1 pinch of salt 1. Preheat oven to 390°F (200°C). 2. Add all ingredients to a blender or food processor and blend until combined. 3. Take about one tablespoon of the mixture and roll it between your palms to form a ball. Repeat the process until there is no dough left. 4. Place the falafels on a baking tray lined with parchment paper and bake at 390°F (200°C) for 30 minutes or until golden brown. Enjoy!
