In partnership with Cardia Advanced Filtered Groundnut Oil Peanut Rice Recipe: Peanut Masala: Peanuts - ¼ Cup Garlic - 3 nos White Sesame Seeds - 2 tsp Cumin Seeds - 1 tsp Urad Dal - 1 tsp Kashmiri Red Chilli - 5 nos Curry Leaves - 20 nos Grated Coconut - 3 tbsp Other Ingredients: Cardia Advanced Filtered Groundnut Oil - 2 tbsp Mustard Seeds - ½ tsp Split Urad Dal - ½ tsp Dried Red Chilli - 3 nos Asafoetida - A Pinch Curry Leaves - 20 nos Peanuts - 2 tbsp Shallots (chopped) - ¼ Cup Salt - ¾ tsp Rice (cooked) - 3 Cups Cooking Instructions: 1. Add all the ingredients for the peanut masala in a heavy-bottomed pan and roast on a low flame until aromatic and lightly browned. 2. Grind it into a coarse powder by grinding it a few seconds at a time, pausing and grinding again. Set the powder aside. 3. Heat Cardia Advanced Filtered Groundnut Oil in a pan. Crackle mustard seeds and then add split urad dal, dried red chilli, asafoetida, curry leaves and peanuts. 4. Saute until the peanuts turn crunchy. Add the shallots and saute until translucent. 5. Add the previously prepared peanut masala and add salt. 6. Add the rice and mix gently. Allow it to cook for 2 minutes. Cooking Tips: 1. You can add any type of rice. Leftover rice works very well for this recipe. 2. Grind the peanut masala with an interval of a few seconds at a time. Otherwise, the ingredients will release oils and it will turn sticky.
