His passion for elevating the bar experience led him to fusing artisanal spirits with seasonal farm-to-table produce and foods. Word quickly spread about these distinct and exotic cocktails that were blurring the lines of conventional thinking. Using a culinary lens and sourced ingredients only from local farmers markets and wild-foraging the Santa Monica Mountains, Matthew was dreaming up truly unique beverage creations that his guests had never imagined. Within a couple years, Matthew was consulting and designing cocktail menus for new fine dining restaurants and bars. Enlisted by television producer, Adam Briles, he traveled around the world as the host of the TV series, Good Spirits, on A&E. His mission was to immerse in local ingredients and culture - in order to create the ultimate globally-influenced cocktail menu. In 2016, he published his first book, Eat Your Drink (available on Amazon) which made some of his most iconic recipes available to the public. In 2018, he opened his dream concept - a 12-seat “liquid omakase” experience restaurant in Malibu, California, called Mon-Li. It featured an 18 course liquid tasting menu that was the hottest ticket on the L.A. foodie scene. Tragically, one month after opening, Mon-Li was destroyed in the Woosley Fire.
