The end of Summer is just about the best time of year for fresh corn and tomatoes, and I love recipes like this one that highlight the beauty of these simple ingredients. Traditional bruschetta is simply tomato, basil, olive oil and balsamic over toasted bread. it's delicious. Several years, I tried adding some freshly cooked corn taken right off the cob and was blown away with how well they worked together. The corn adds a bit of sweetness to the bruschetta, as well as a new crunchy texture element.
