Mappilla samba red rice Uttapam Recipe: Step 1- Take 1 cup of OGMO Mappillai Samba Classic Idli/Dosa Premix in a bowl. Step 2 - Add about 1 cup of water and mix well with a spoon. Add a tesp. of old idli batter or curd/yoghurt to speed up the fermentation process. Step 3 - Cover it and leave it overnight for 9-10 hours to ferment (more in winter) Step 4 - Make Uttapams as shown in the video. Serve it hot with sambhar or chutney. Note You can also add eno or baking soda to make instant Uttapams. Adding curd or old Idli batter to the premix helps ferment the batter fast.
