In this video we will learn to make "Churlai (in Maithili language)." Churlai's primary ingredient is choora which is also known as chewda, chewra, poha or flattened rice. It is a uncomplicated recipe where flattened rice is mixed with jaggery syrup and bound with hand to give desired shapes, generally spherical shape is preferred. These sweet crisp balls are regional favourites are made generally for occasion of Makar Sankranti out of new paddy, hence welcoming the season of harvest. Upon resting for some time these sweets become hard and crisp. Sometimes it is served with curd or yogurt that makes it softer to consume.
