This is a very nutritious and healthy curry made using spinach and buttermilk. This recipe serves 3. Ingredients: Spinach (Palak) - 3 cups Yogurt (Curd/Dahi) - 1 tbsp Besan (Gram flour) - 1 tbsp Raw peanuts - ⅛ cup Oil - 1 tbsp Garlic - 4 pods Green chilies - 2 Mustard seeds - ½ tsp Cumin seeds - ½ tsp Asafoetida (Hing) - ¼ tsp Turmeric powder - ½ tsp Salt - ½ tsp Water - 1 cup Method: Preparation: Step 1: Take garlic and green chilies and coarse grind them together and set aside. Step 2: Take yogurt, besan, and water and blend such that there are no lumps. Keep this aside. Step 3: Soak peanuts in the water at least 1 hr before we make the curry. The alternative way is to soak the peanuts in water and microwave for 1 min. 1. Heat a pan on medium flame and add oil. 2. Add mustard and cumin seeds. 3. Add hing. 4. Add green chili and garlic paste. 5. Saute for 30 secs. 6. Add soaked peanuts, spinach, turmeric powder and saute for 2 mins. 7. Cover and cook 8. Then add buttermilk + besan mixture. 9. Keep stirring continuously until the curry comes to a boil. 10. Once the curry has been boiled, cover with a lid and turn off the flame. 11. Curry is ready.
