Celtic sea salt 2 1/2 tsp. Baking soda 2 whole eggs & 1 egg yolk 1 C buttermilk 1 cup quality olive oil 1 T vanilla extract 2 1/2 cups All purpose sifted flour 1 bag peanut butter chips (4 oz) Extra granulated sugar for bottom of Bundt (optional: adds brûlée crunchy texture). Mix dry ingredients and set aside. Mix brewed coffee and cocoa powder (microwave for 45 seconds or so until mixture is lump free mix well) set aside. In mixer or by hand whisk olive oil, buttermilk, eggs and vanilla until incorporated well. Add dry ingredients and coffee/cocoa powder mixture. Add peanut butter cups to bottom of Bundt pan and fold into batter. Cook in oven on 350•F for 1-1/2 hours or until knife/toothpick comes out clean. Sprinkle with powdered sugar and enjoy!
