When it rains the first thing that triggers your brain is to have a Vadapav along with cutting chai (tea). This feeling is the love towards this most popular Mumbai street food. Many emotions and sentiments of the average Mumbaikar are attatched to this humble Vadapav. I have attempted the mini version of Batata Vada along with hirvi (green) chutney, lal sukha chura (red dry chutney) and tala leli hirvi mirchi (fried green chilly). Prep time: 30 mins Cooking time: 30 mins Serves: 4 Ingredients for Mini Batata Vada GREEN CHILLIES: 7-8 GARLIC: 8-9 cloves GINGER: 1 1/2 inch, cut into pieces COOKING OIL: 2 tbsp MUSTARD SEEDS: 3/4 tbsp CURRY LEAVES: 1 spring ASAFOETIDA(HING): 1/4 tbsp SALT: as per taste TURMERIC POWDER: 1/2 tbsp BOILED POTATOES: 4-5, mashed CORIANDER: 1/2 cup LEMON JUICE: 1 tbsp (half lemon) BESAN(GRAM FLOUR): 2 cups RICE FLOUR: 1 tbsp TURMERIC POWDER: 1/2 tbsp CHILLI POWDER: 1/2 tbsp ASAFOETIDA(HING): 1/4 tbsp BAKING SODA: 1/4 tbsp WATER: as required OIL: for frying TIPS TO EASE COOKING: The right way is to mash potatoes roughly, however for kids and elders you can mash it finely. For one medium size potato, use 2 green chillies, 2 cloves of garlic and 3 small slices of ginger. Taste the mixture before making vada for salt and spice. If its spicy, dont worry as when you fry the spiciness reduces or you can add 1/2 tbsp of lemon juice to balance the taste. If you want more spicy, do add green chillies, garlic and ginger as required to the mixture. Just fry it little in tadka pan and add to the mixture. Deep fry vada on medium flame and just 15 seconds before removing from oil keep the flame high. This process makes the vada crispy. Keep an eye if it burns. Try adding the vadas with spoon for proper shape. Make the batter semi thick as Mini Batata Vadas are small bites with less mixture, for bigger Batata Vada (Vada Pav) we make the batter slightly thick as we have more mixture in it..Hope this helps.
