Claire Saffitz's Walnut Maple Sticky Buns | Dessert Person | Recipe Test

*Flour exploded on my shirt when I was measuring it out, so forgive my messy top ;) This is Claire Saffitz's recipe for Walnut Maple Buns from her Dessert Person cookbook. The buns are light and fluffy and have a great balance of sweetness, (not overly sweet). This is a mix between cinnamon rolls and sticky buns. The bread is a sweet yeasted dough that pulls apart and is oh so tender. The filling is made of brown sugar and cardamom or cinnamon roll (whichever you prefer) and fresh orange zest/ lemon zest.The buns are topped with a classic sticky bun topping of toasted walnuts and a maple glaze. This can easily be swapped out with pecans or any nuts of your choosing. The top is crispy, chewy and gooey when you pull it apart. The buns are baked upside down. I had one issue with getting the buns out, so I would recommend using parchment paper to keep the nuts and glaze from sticking at the bottom. If you don't want to use parchment paper, just scrape the nuts out and assemble over the top of the bun while still warm. I made the dough by hand, but of course a stand mixer/ Kitchen aid would make your life easier. I used half of the recipe but the full ingredients are below. Videos Will be posted DAILY.
