I tried making Claire Saffitz's Classic English Muffins from her new cookbook Dessert Person. It is a lot harder to make without a stand mixer. I made it by hand but there are a few things I would like to go back and correct to get an even softer muffin and better rise. Overall it was still tasty and paired well with jam, avocado and poached eggs :).
