Kabuli pulao or Qabili pulao is special rice recipe made in Afghanistan, Uzbekistan and Pakistan. It consists of rice mixed with raisins, carrots, and beef, mutton or chicken. There exist different variations depending on the region. Here is Shinwari Cuisine's special simple recipe of Kabuli Pulao Ingredients: .Rice 1Kg .Mutton ½ Kg .Onion 2 medium size .Garlic cloves 7-8 Pcs .Salt 1tbsp . Garam Masala Powder (Whole spice powder) 1tsp . Carrots 1 cup (julienne) . Raisins 1/2 cup . sugar 2 tbsp Preparation: .In a pan, add 2 tbsp of oil, 1 cup of carrots , 1/ cup of raisin and sauté it. After 1-2 minutes of stirring, add 2 tbsp of sugar and sauté until sugar melts. . In pot, add mutton with 1.5 litter of water along with 1 tbsp. of salt , 7-8 Garlic cloves and 1tsp Garam Masala Powder (Whole spice powder). Cook till the meat is tender. Separate the meat from its stock and set aside. .In a separate pot , add 1/2 cup of oil and add meat and fry it till it becomes brown. Now take the meat out of the pot and add 2 medium size Onion (sliced) and fry until golden brown. Add the stock in the pot and 1 kg soaked rice , cook on the fast flame for about 10-15 minutes.When water is almost dried , add the fried mutton , carrots and raisins .
