Qabuli Palow | Afghan Rice

**WATCH IN HD** FULL RECIPE: Servings: 6-8 Ingredients: 4 cups basmati rice 2 lb lamb or veal (with bones) 1 cup oil 1 onion sliced 20 oz sliced carrots (or 6 large carrots sliced) 1 cup raisins 1/3 cup slivered almonds 1/4 cup skinned & sliced pistachios (optional) 4 tsp sugar Water as needed Spices for the sauce: 1 tbsp salt 1 tsp cumin 1/2 tsp cloves 7-8 green cardamom pods 2 black cardamom pieces 1/2 tsp black pepper 1 stick cinnamon For the nuts: 1 tbsp oil Spice for the rice: 3/4 tbsp black pepper 5-6 cardamom pods Instructions: 1. Soak the rice in water for at least 2 hours. 2. Heat the oil in a pan and fry the carrots in 4 batches. 3. Add in a teaspoon sugar for each batch. Set aside. 4. Soak the raisins in hot water for 10 minutes and drain. 5. In the same pan as the carrots, add in half of the sliced onions until brown. Set aside. 6. In the remaining oil add the lamb and stir. 7. Add salt and spices. 8. Leave to cook for 20 minutes. 9. Add the remaining onion slices and stir until onion is cooked through & water dries up. 10. Add 2 cups water. 11. Lower the heat and cook for 45 minutes or until the meat is tender. 12. Meanwhile in a small saucepan add a teaspoon oil and roast the nuts (almonds & pistachios). 13. Take the meat out and set aside. 14. In the saucepan add the browned onion and enough water for the rice (approx. 2 cups). Set aside. 15. Fill up a large pot halfway with water. Boil. 16. Add in 1 tablespoon salt. 17. Drain the soaked rice and add to the water. 18. Boil for about 5 minutes or until its cooked halfway (rice should still be hard). 19. Meanwhile, grind the black pepper and cardamom. 20. Once the rice is ready add in 2 cups cold water. 21. Drain the rice. 22. Place back into pot. 23. Add the meat sauce with a strainer and check the rice for taste. 24. Add salt if needed. 25. Mix the sauce with the rice. 26. Add in all the ingredients with the black pepper & cardamom spice. 27. Cover and leave on the stove till the steam comes out. 28. Place in a preheated 400 degree oven for 20 minutes. 29. Decrease the oven temperature to 350 degrees for another 15 minutes. 30.
