Carrot Halwa || Gajar ka Halwa || Instant Pot Carrot Halwa Recipe - RKC Carrot Halwa also known as Gajar ka halwa is a delicious dessert made of grated carrot, milk, sugar and milk powder. #CarrotHalwaRecipe #GajarKaHalwaRecipe #InstantPotCarrotHalwa Ingredients 1 pound carrots, grated 1/2 cup whole milk, warm 1/4 cup milk powder 2 tbsp Khoya /mawa (optional) 10 strands of Saffron 1/2 cup sugar, adjust to your taste 3 tbsp ghee or unsalted butter, divided 1/4 tsp cardamom powder 2 tbsp chopped cashews and almonds 1 tbsp raisins(optional) 2 tbsp Sliced almonds and pistachios to garnish Preparation 1. Wash, peel and shred carrots. Keep it aside. Chop cashews and almonds and keep it aside. 2. Turn on instant pot select sauté mode, when it says hot, add 2 tbs ghee or butter. Add chopped nuts and raisins and roast and remove from the pot. Add in grated carrots and saute for 4-5 minutes. 3. Add warm milk, saffron stir well. Close lid and Pressure Cook for 5 minutes. Make sure to set the valve to Sealing position. 4. QR after 5 minutes and open the lid and stir the halwa. Turn on saute mode, Add sugar, milk powder, roasted nuts and raisins, 1 tbs ghee and stir well and cook for 5-7 minutes until most of the liquids are evaporated. 5. Add cardamom powder, grated mawa to it cook for 2-3 minutes and stir well. Garnish with sliced almonds or pistachios and Serve hot or chilled. Notes 1. For stovetop: In a large pot, when it’s hot Add ghee/ butter roast the Nuts and raisins and set aside. Add grated carrots and begin to stir for 4-5 minutes. 2. Add warm milk to it and Cook until the milk has completely evaporated. Keep stirring constsntly in between to prevent burning. 3. Add sugar and stir. Sugar would release lot of moisture.  4. Cook until half the moisture evaporates. Add ghee and stir well. 5. Continue to cook until the moisture evaporates and the halwa thickens. If you like you can add grated khoya at this stage. Add cardamom powder, Stir and cook for just 2-3 minutes. Garnish carrot halwa with chopped nuts and raisins. Serve Warm or chilled.
