Add clarified butter and fry raisins/sultanas and cashew nuts until golden. Remove and keep aside. • Add peeled and grated carrots and whole milk, mix and press cancel. • Secure the lid and turn steam release knob to sealing position. • Pressure cook on High Pressure for 4mins. Turn off Keep Warm mode. • After Instant Pot turns off let pressure release naturally for 2 mins. • After 2 mins turn the steam release knob to venting position for quick pressure release. After float valve falls down open the lid. • Mix, press Sauté - Normal and add sugar, whole milk powder, green cardamom powder and clarified butter and mix. • Cook till moisture evaporates whilst stirring frequently making sure it doesn’t stick to the bottom. • Press Cancel after moisture has evaporated and add fried raisins/sultanas and cashew nuts leaving some cashew nuts aside for garnishing in the end. • Serve warm and garnish with some slivered Almonds and Pistachios and some fried cashew nuts that were kept aside.
