Purple Sweet Potato - before & after it's cooked

Ever wonder what an Okinawan or Asian sweet potato looks like before it's cooked and after? This video shows you a Hawaii favorite that's used for desserts and eaten plain. I read that it's primarily grown in Hawaii because of volcanic soil. Most websites say that it's difficult to grow anywhere else in the US due to this soil need. There are other types of potatoes that look white on the outside and are purple but not sweet. You can use this easily for sweet potato pie, add it to haupia pudding mix, and any reciepe that asks for sweet potatoes. You could even peel off the skin and put it in the juicer!
