Graham Crackers Ingredients: 2 cups home ground oat flour (measure rolled oats before processing) ¾ cup almond flour ⅓ cup arrowroot powder 1 cup date sugar ¼ cup nut butter ½ cup water 1 tsp baking soda 1 tsp cinnamon ½ tsp vanilla bean powder or 1tsp vanilla extract Optional: ¼ tsp salt Instructions: Preheat the oven at 325F. Combine all the dry ingredients in a bowl. Add the nut butter and roughly mix. Add water and using your hands or silicone spatula, mix until dough forms. Place dough between 2 layers of parchment paper ( dust with almond flour or arrowroot powder if it’s sticking ). Divide dough and roll into a rough rectangle between ⅛-¼ inch thick. Using a pizza cutter or large knife, cut uneven edges off of rolled dough to form straight edges on all sides of the rectangle. Cut the rectangle into 4 equal pieces. Next, using a knife gently score each of the four sections into quarters. This can be done by pressing gently with a knife, take care not to cut all the way through. Use a fork to evenly poke holes in each section. Place the crackers on a parchment -lined baking sheet. Bake for 20 minutes, rotate the pan half way through baking time. Crackers will still be a little soft when removed from the oven. Transfer to a wire rack to fully cool. Once they are completely cool they should be crisp. ** Baking time may vary depending on how thick the dough is rolled.
