The Asian Cooking wok is something I use on a day to day basis. I could cook up 2 dishes in 15 minutes. It's a fast and fiery style of cooking that gives the food it's caramelised flavour and extremely quick to cook. Here are the few steps summarised from the video! 1) When using authentic black seasoned Asian wok, be sure to heat the wok up till it starts smoking BEFORE putting any fats or oils into the wok. This ensures the non-stick characteristics of the wok. 2) Use your biggest flame from your stove. Wok cooking is suppose to be high heat and quick cooking! 3) Using 2 wooden spatulas to scrape the bottom and lift upwards to not break the rice up. 4) Always use ingredients with the least amount of moisture to ensure the rice gets soggy 5) Always use leftover rice kept in the fridge from the night before. --------------------------------------------------------------- Ingredients 500-800g cooked leftover rice 3x chinese sausages 1-2x knobs of garlic 3x tbsn pork lard 1x stalk of green onions 6-7x eggs 3x tbsn oyster sauce 2x tbsn sesame seed oil Salt and pepper to taste --------------------------------------------------------------- 1) After heating the wok, pour in 1-2 tbsn of pork lard and coat the entire surface area of the wok with the melted lard. 2) Pour in cracked eggs and scramble them. Besure to break them apart and scrape the bottom to ensure the egg does not stick to the wok. Cook eggs until well done, then remove eggs from wok. 3) Heat and oil wok using the same method. Pour in chopped garlic and chinese sausage. 4) Stir fry on high heat for 30 seconds. 5) When garlic starts to brown, pour in rice.
