This quick and easy breakfast is inspired by the Shakshuka in Israel, and other parts of Middle East and North Africa. In my own version of the recipe, I combined onions, tomatoes, garlic, spices, and eggs. This comforting breakfast will leave you wanting more! Recipe: 2 tbsp olive oil 1 large onion, diced large handful of sliced mushrooms 1 teaspoon salt, plus more to taste 1 cup diced green bell peppers (or any color of your choice) 1/2 teaspoon cumin 1/2 teaspoon paprika 1/2 teaspoon turmeric 1/2 teaspoon freshly ground black pepper 1/4 teaspoon cayenne 3 cups of diced fresh tomatoes 1/2 cup water or broth, or as needed 4 large eggs (or as many as you can fit in you pan) Sprinkles of feta cheese If you enjoy this recipe, make sure to leave a comment below to let me know!
