1 leek 1 zucchini Half onion 1 garlic 1/4 cup of cashews Salt and pepper 2 tps olive oil Vegetable broth ( 2-3 cups ) 1 lemon Small thin noodle ( if you like ) vermicelli : like half hand full. Sauté onion and garlic for few minutes. ( you can add the cashew as well or later ). Add the zucchini and leek and stir for 10 minutes till soften. And the vegetables broth and simmer for 30 minutes. Blend everything in the food blender till you get the smooth result. Add the lemon and the vermicelli and keep stir for few minutes. Taste it if need more salt and Pepper.
