Grandma Nutsie Chicken Paprikash

Ingredients: nice, plump chicken (not a fryer), have butcher cut in 8ths 4 large onions (sweet) 3 full tbsp paprika (hungarian) Dice up onions. Use a large fry pan to fry onions. use 1/4 cup of canola oil (maybe a bit more) - let oil heat up. Start to fry onions in between high and medium heat. Cook onions until caramelized, at least 30 min. That is the secret. Don't burn. Kind of like onions before burning. Pre-heat oven to 350 degrees. When onions are done -- add the 3 tbsp of paprika and mix well. Transfer to a large baking pan. Add chicken pieces on top of onions. Salt the chicken. Cover with aluminum foil and seal well. Bake about 2 hours. Serve with rice recipe and dumplings (recipes to come later).
