Recipe Ingredients: 2 cups all-bran cereal, flakes 1 cup raisins 2 cups boiling water 3 bananas, mashed 2 eggs, beaten ¼ cup vegetable oil ½ cup sugar, white 2 cups whole wheat flour ½ teaspoon salt 2 teaspoons baking soda Instructions: 1. Preheat the oven to 350.F. Grease or line with paper linters, 2 muffin pans. 2. Combine bran cereal, boiling water, and raisins in a bowl and let sit for 5 minutes 3. Once the cereal and raising mixture is cool enough to touch (and cool enough that the eggs will not cook once added), add the bananas, eggs and oil to the bowl and mix to combine. 4. Add the remaining ingredients to the bowl and mix until just combined. 5. Divide the mixture evenly between the muffin cups (each should be about 2/3 full of batter). 6. Place in preheated oven and bake for 15-18 minutes or until a toothpick inserted into the centre of the muffin comes out clean.
