O’ Charley’s Loaded Potato Soup | Copycat Recipe

How to make loaded potato soup. This is a step by step copycat recipe for O'Charley's Loaded Potato Soup. Ingredients: 2 pounds petite red potatoes Chicken stock to cover 1/4 cup butter 1/4 cup flour 4 cups heavy cream 16 oz. VELVEETA cheese 3 cans Cheddar Cheese soup 2 teaspoons black pepper 2 teaspoons garlic powder 1 1/2 tablespoons hot sauce Crumbled bacon Shredded cheese Chopped chives (optional) Wash and cut up the potatoes in bite size pieces ( do not peel). Cover with chicken stock and bring to a boil then cover and turn heat down to simmer for approximately 15 minutes or until 3/4 the way cooked. Drain the potatoes (save the chicken stock to add back in later to get the consistency that you like). Melt butter and stir until it gets hot and bubbly over medium heat then add in the flour. Keep stirring the roux until thickened then add the heavy cream. Stir continuously until it becomes very thick. This may talk a few minutes. Be patient, and keep stirring so it doesn’t burn. Then turn heat down to low. Then add the VELVEETA cheese, 3 cans cheddar cheese soup, the black pepper, garlic powder, and hot sauce. Once it’s all melted down, add the potatoes back in and fold into the soup. If the soup is too thick you can add some of the chicken stock back in. Cover and let simmer for a few minutes then the soup is ready to serve. Dish out into a bowl and top with crumbled bacon, shredded cheese, and chopped chives (optional). Enjoy!
