🌆 Mumbai Street-Style Tawa Pulao A spicy, buttery rice dish inspired by Mumbai street vendors—best enjoyed hot with cooling raita. 🧺 Ingredients Base Oil – 3 tbsp Butter – as required Cooked rice – 1 cup Whole Garam Masala Jeera (cumin seeds) Shahi jeera Cloves Cinnamon Bay leaf Vegetables Chopped beans Chopped carrot Boiled potatoes (cubed) Frozen green peas Onion – chopped Tomato – chopped Masala & Flavour Everest Pav Bhaji Masala – 2 tsp Green chillies – 3 (chopped) Coriander leaves – finely chopped Salt – to taste Lemon – 1 Red Chilli Paste Byadigi red chillies – 10 Ginger – ½ inch Garlic – 3 cloves 🔥 Preparation Prepare the Chilli Paste Soak Byadigi red chillies in water for 20 minutes. Grind soaked chillies with ginger and garlic into a fine paste. Keep aside. Cook the Masala Heat a kadai or tawa. Add oil. Add whole garam masala items and sauté until aromatic. Add chopped beans and carrot with a little salt. Sauté for 2–3 minutes. Add frozen green peas and mix well. Add chopped onion and green chillies; sauté till onions turn soft. Add chopped tomatoes and cook until mushy. Add boiled potato cubes and mix gently. Spice it Up Add the prepared red chilli paste. Sauté well until oil starts separating and raw smell disappears. Add Rice & Finish Add cooked rice and mix carefully. Add pav bhaji masala, butter, and chopped coriander. Mix gently so rice doesn’t break. Squeeze lemon juice just before switching off the flame. 🍽️ Serving Suggestions Serve hot with raita, sliced onions, and lemon wedges.
