Gooey Chocolate Mug Cake || The Keto Kitchen

Low Carb & High Fat / Keto Gooey Chocolate Mug Cake. Mug cakes are the perfect dessert when you can't be bothered to make a dessert (or you don't have time!) This mug cake is not eggy or stodgy like most - it's really light and spongy. It's very chocolate tasting so you'll love it if you're a chocolate fanatic! Just make sure your chocolate is dark! | The Recipe | CAKE INGREDIENTS: 1 & 1/2 tbsp Coconut Flour 1/2 tsp Baking Powder 2 tbsp Cocoa Powder (CHECK THE CARBS AS SOME BRANDS ARE HIGH!) 2 tbsp Sweetener (I used erythritol) 1 Egg 5 tbsp Double/Heavy Cream 2 tbsp Dark Chocolate, chopped up into small pieces (I used Cavalier 85%) 1/4 tsp Vanilla Extract TOPPING INGREDIENTS: 2 tbsp Dark Chocolate (I used Waitrose's 90% Dominican) 1 tbsp Butter 2 (or 3) tbsp Double/Heavy Cream METHOD: 1. For the cake: In a small bowl, mix all dry CAKE ingredients well, ensure there are no lumps. 2. Add all wet CAKE ingredients and mix until well combined. 3. Decant batter into 2 microwaveable mugs (or small bowls). 4. Place in the microwave and cook on high for 90 seconds (1 minute 30) - this may vary depending on your microwave. Mine is 900W. 5. For the topping: In a small microwave safe bowl, mug or glass, add the dark chocolate and butter. 6. Place in the microwave on high for 20 seconds. Remove and mix until chocolate has fully melted. 7. Add 2 tbsp of cream and mix gently. If it starts to seize (separate), add the other tbsp of cream and mix well. 8. Add the topping to the mug cake and enjoy! MACROS: Please note, all macros are calculated with My Fitness Pal and may vary on ingredients used. This includes the topping and only 2 tbsp of heavy cream (rather than 3). Serves 2.
