Muri Ghonto is one of the signature dishes from the Bengali Cuisine. This delicacy (Muri Ghonto) is prepared with Rice and Fish head (mostly Rehu Fish/ Rui Mach or Katla fish). Muri stands for Head. We mostly savor it with plain rice. Here, fish head is cooked with Gobindobhog rice and a few spices. Ghonto is a mushy form of a side. This end product is actually a great mixture of fish head and rice.Bengali’s are known for their preference for eating Rice. However, Rice is not only prepared as the main dish but there are several side dishes prepared with rice too. Muri Ghonto is one such dish prepared with rice and is a side dish but not a main. Ingredients: ½ cup gobindobhog rice ( use any short grain aromatic rice if gobindobhog is unavailable) 1 fish head fried and broken into pieces 2 tbs mustard oil 1bay leaves 1 tsp cumin seeds 3-4 cardamom 1 cinnamon 2-3 cloves 1 cup onions chopped 1 tsp ginger paste 1 tsp garlic 1 tbs tomato paste 1 tsp turmeric powder 1 tsp chilli powder 1 tsp cumin powder 2-3 green chillies 1 glass water 2 tsp sugar Salt to taste 1 tbs ghee 1 tsp garam masala powder Method: 1. Wash and clean the rice and keep aside. If you are using basmati soak it in enough water for 1 hour. For ‘Govindo Bhog’ rice you don’t need do this. 2. Clean the fish head carefully. Sprinkle and rub some salt and turmeric powder and leave it for 20 mins. 3. Fry the fish head until it turns golden brown. Try to break them into small pieces to avoid mess. It will also help you to relish them later. 4. Heat mustard oil in a pan. Add bay leaves, cumin seeds, cardamom , cinnamon and cloves and cook till it emits a nice aroma. 5. Add the chopped onions and sauté till the onion is pink. Add ginger paste, garlic, tomato puree and cook well. 6. Add chilli powder, salt, sugar, turmeric powder and cumin powder and cook till mixed well. 7. Add the rice and mix well. Add green chilies and the fried fish heads and cook till everything is mixed well in the pan. 8. Add water and cook in low heat till rice is cooked and the water is all used up. 9.
