Combine the sugar, vinegar, water, ketchup, potato starch, zest, and juice of 1 orange in a bowl and mix. Halve the chicken breast lengthwise and cut into wide strips. Peel, core, quarter, and slice the pineapple. Fry the chicken breast and pineapple in a hot pan with rapeseed oil. Meanwhile, slice the bell pepper into thin strips and the ginger into wafer-thin slices, then into thin strips. Roughly chop the spring onions. Add the vegetables and ginger to the other ingredients in the pan and fry briefly. Add the cooked mie noodles and fry, add the cilantro, and deglaze with the sauce.
