In this recipe, eggs are steamed in a unique way and combined with a rich, flavorful masala gravy. Perfect with chapathi, paratha, or steamed rice. Try this delicious and creamy Egg Curry made in traditional Konkani style. Riich gravy, simple ingredients, and full of flavor – perfect with rice or chapati. If you’re craving a comforting homemade meal, this easy egg curry recipe is a must-try. Ingredients: For Steamed Eggs: 5 Eggs pinch of salt pinch of Red Chilli Powder few Coriander Leaves Oil – to grease the bowls For Masala Paste: 1 tbsp Oil 5-6 Garlic Cloves 1 inch Ginger 3 Green Chillies 5-6 Cashew Nuts 2 Medium Onions – sliced 1 handful Coriander Leaves Few Mint Leaves 1/2 cup Fresh Curd (Thick Yogurt) For Curry: 2 tbsp Oil or Ghee 1 small piece Cinnamon 2 Cardamoms 3 Cloves 1/4 tsp Turmeric Powder 1 tsp Coriander Powder 1/2 tsp Red Chilli Powder 1 tsp Pepper Powder Salt to taste 1 cup Masala Water (from rinsing the mixer jar) Coriander Leaves – for garnish Preparation: Steaming the Eggs: Grease small steel bowls with oil. Break one egg into each bowl. Sprinkle salt, red chilli powder, and chopped coriander leaves on top. Boil water in a steamer or a large pan. Place the egg bowls inside, cover, and steam for 2-3 minutes or until eggs are set. Once done, cool and demould the eggs. Set aside. Preparing Masala Paste: In a pan, heat 1 tbsp oil. Add garlic, ginger, green chillies, cashews, and sliced onions. Sauté till onions change color. Add coriander leaves and mint leaves, stir for a few seconds and turn off the flame. Let it cool, then grind with 1/2 cup curd to a smooth paste. Do not add water. Making the Curry: Heat 2 tbsp oil or ghee in a pan. Add cinnamon, cardamom, and cloves. Add the prepared masala paste and cook on low heat. Add turmeric, coriander powder, red chilli powder. Fry on low flame until aromatic. Add pepper powder and salt to taste. Pour in 1 cup masala water (from mixer jar). Keep the curry slightly thick. Simmer covered for a few minutes. Add the steamed eggs and cook on low heat for a few seconds. Garnish with coriander leaves. Serve hot with chapathi, paratha, or steamed rice.
