Somebody told me you can make meringue without egg - substituting the water you drain off cans of chick peas and beans. I wasn't sure that was likely but I decided to try. It absolutely works! My forum http://eliseharris.freeforums.net Recipe - the liquid drained from 1 can of chick peas(garbonzo beans) or any other sort of legumes (works with stuff you drain off tofu and cans of any beans or peas. Just the water though - not any in sauce!) 1/4 teaspoon cream of tartar Pinch of sea salt 150 grams of caster sugar/fine sugar (about 3/4 of a cup I think) - use sugar beet-derived sugar if you want it vegan/vegetarian. Vanilla essence or other flavour Whisk ingredients together until you get soft peaks Use either as topping for cake or pie or spoon/pipe onto a baking trayt and cook in a cool oven (gas mark 1, 100c, 212f) for 45 minutes. After cooking leave in oven until oven is cool. Use meringues as you would any other meringues. They taste the same, the look the same, the texture may even be better.
