FULL VIDEO - VEGANISH FRIED CABBAGE & COLLARD GREENS - Cooking From The Food Bank continues as a video series with easy recipes using staples from food banks, food programs, pantries & farmers markets. This year we are now adding more plant based anti-inflammatory meals. In this video we give Love and gratitude to all the volunteers that shop and deliver up and down many stairs, fresh free food to our doors. This video takes a classic soul food dish of fried cabbage and makes it healthier. Farm fresh collards, cabbage, onions, garlic are all from our delivered community food box and Booker T. Washington's Community Service Center Farm Fresh Pantry. Simply fry cabbage and collards in avocado oil and you have a heart healthy anti-inflammatory one pan meal loaded with nutrients and protein! Tip: cut collards and let sit for 20 minutes to maximize nutritional value*. Veganish: Cooking meat separately gives folks the option of adding meat and the delish bacon au jus (bacon fat) on top the cabbage and collards. We used Sonoma County Meat co. organically humanely raised pork bacon pieces from the Fillmore farmer's market! TIP: when eliminating salt and smoked meats to create a Soul Food vegan meal you must add lots of spices for flavor. The other spices all from Trader Joe's - Ajika Georgian Seasoning Blend, Smokey & Hot Chili Powder, Smoked Paprika Cabbage: cruciferous vegetables are part of the Brassica family - cauliflower, broccoli and brussels sprouts are all rich in folate and vitamin K. Dark green cruciferous veggies, like kale and collards also are a source of vitamins A and C and contain phytonutrients. Research surrounding this phytochemical has shown it to be a powerful antioxidant and anti-inflammatory. Collard Greens: Did you know collard greens reduce inflammation which helps manage diabetes and arthritis? They detoxify the body and have high levels of antioxidants. One cup of cooked collard greens provides nearly 8 grams of fiber which helps weight management. Collard greens also contain an antioxidant known as alpha-lipoic acid. Alpha-lipoic acid (ALA) can lower glucose levels, increase insulin sensitivity, and prevent changes related to oxidative stress in folks with diabetes. Collards contain a powerful anti-cancer compound called sulforaphane which supports a special detoxification mechanism called the Nrf2 pathway. *When we chop collards and allow them to sit for about 20 minutes before cooking, the sulforaphane content increases exponentially! Collards are supportive of healthy liver function which is key in metabolizing and excreting excess hormones, old cholesterol, and cellular waste… think of it like our cleanup organ. Collards are also rich in fiber which benefit our gut microbiome and immune system.
