Fire up the Weber Searwood Pellet Grill and get it dialed in to 325℉ using Royal Oak Charcoal Hickory Pellets. 2. In a large mixing bowl, combine ground chuck roast and ground pork along with the other binding ingredients. 3. Mix everything together by hand until fully combined, but don’t overwork the mixture. 4. Lay out a sheet of foil on a baking sheet and form the meat mixture into a loaf, about 3–4 inches high. Once shaped, season the outside of the loaf generously with more Heath Riles Beef Rub and Heath Riles Competition BBQ Rub, making sure to coat all sides. 5. Place the baking sheet of meatloaf on the grill and smoke at 325℉ for about 1 hour and 15 minutes. Start checking the internal temp at this point. 6. Once the internal temperature hits 165℉, glaze the meatloaf with ½ cup of Heath Riles Sweet BBQ Sauce. Close the lid and let the glaze set for another 15–20 minutes until it’s tacky and caramelized. 7. Remove the meatloaf from the grill, let it rest for 5–10 minutes, then slice it up and dig in. It’s smoky, savory, and packed with flavor from edge to edge.
