If you've never had the chance to try chile rellenos, I highly recommend you fix that today. Chile rellenos are a mexican specialty that typically uses poblano peppers, which actually the word poblano is an indicator of where the peppers come from, the Mexican state of Puebla. Fun fact, that's where my family is from on my mom's side. Sometimes you don't always have a chance to get the exact peppers you need, but the great thing is that you can improvise with what is around you. However the method is pretty much the same. Check it out. You will need: 4 sweet red Italian peppers 4 eggs, whisked until light and fluffy - basically one egg for each pepper ½ cup white flour 4 oz of melting cheese of your choice (but I recommend mozzarella cheese.) 3-4 cups of saltwater brine. (Water, Ice, and a teaspoon of salt.) 3-4 tablespoons of cooking oil salt and pepper to taste Please note that I also say 3-4 tablespoons of oil but you may need a bit more.
