Braised Pork Belly (Pak Loh Bak) recipe - dry version

Ingredients: Pork Belly, 5-spice powder, Galangal, garlic, red onion, sugar, dark soy sauce and light soy sauce You may substitute pork belly with other parts of pork (loin, lean meat, pork knuckle/hock). Remember to blanch the meat before cooking. Fry the pounded galangal, minced garlic and red onion until fragrant. Melt sugar on pan and coat the melted sugar onto the meat. To add in pork stock (which I got from steaming the pork belly)/water based on how thick/watery you want your sauce to be. Add in 1 tsp of 5-spice powder (not too much as it may have bitter taste), add in dark soy sauce and light soy sauce to taste. Cook over low heat for around 20-25 minutes until you get a dark color on the meat.
