Here's a recipe for Fish Kofta by Gulnaaz: Ingredients: For the Fish Kofta: 500 grams of boneless fish fillets (any white fish like tilapia or cod works well) 1 small onion, finely chopped 2 green chilies, finely chopped 1/2 teaspoon ginger paste 1/2 teaspoon garlic paste 1/2 teaspoon red chili powder 1/2 teaspoon turmeric powder 1 teaspoon coriander powder Salt to taste For the Gravy: 2 tablespoons oil 1 large onion, finely chopped 2 tomatoes, chopped 1/2 teaspoon cumin seeds 1/2 teaspoon ginger paste 1/2 teaspoon garlic paste 1/2 teaspoon red chili powder 1/2 teaspoon turmeric powder 1 teaspoon coriander powder 1/2 cup yogurt Salt to taste Fresh coriander leaves for garnish Instructions: Start by preparing the fish kofta mixture. Clean and wash the fish fillets thoroughly. Pat them dry with a paper towel. Cut the fish into small pieces and then place them in a food processor. Add the finely chopped onion, green chilies, ginger paste, garlic paste, red chili powder, turmeric powder, coriander powder, salt, gram flour, and beaten egg to the food processor. Blend everything together until you have a smooth mixture. If the mixture is too wet, you can add a little more gram flour to bind it. Heat oil in a deep frying pan over medium-high heat. While the oil is heating, wet your hands with water and shape the fish mixture into small, round koftas or balls. Carefully drop the koftas into the hot oil and fry until they are golden brown and crispy on all sides. Remove them with a slotted spoon and place them on a plate lined with paper towels to drain excess oil. Set aside. In a separate pan, heat 2 tablespoons of oil over medium heat. Add the cumin seeds and let them splutter. Add the finely chopped onions and sauté until they become translucent and start to turn golden brown. Add ginger paste and garlic paste and sauté for another couple of minutes until the raw aroma disappears. Add the chopped tomatoes and cook until they become soft and the oil starts to separate from the masala. Add the red chili powder, turmeric powder, coriander powder, and salt. Stir well. Beat the yogurt until smooth and then add it to the pan. Cook for a few minutes, stirring continuously, until the gravy thickens. Add some water to adjust the consistency of the gravy. Simmer for a few more minutes. Gently place the fried fish koftas into the gravy and simmer for another 5-7 minutes to allow the koftas to absorb the flavors of the gravy. Garnish with fresh coriander leaves and serve hot with steamed rice or naan.
