The main ingredient here is the banana leaf. Its amazing flavour is felt through out the dish. Paneer & Tomato gravy is cooked in banana leaf resulting in a delicious Paneer Pollichathu. This Kerala dish is Usually done with Fish, I wanted to try the vegetarian version with Paneer & it turned out amazingly delicious. Ingredients: serves 3 to 4 Paneer marination: 300 gms Paneer 1/2 tsp Turmeric powder 3/4 tsp Chilli powder 1 tsp Coriander powder 1/4 tsp Black pepper powder 1/4 tsp Garam masala 2 tsp Lemon juice Salt needed 2 tsp Oil Water needed Oil to roast Banana leaves to make pockets Onion Tomato gravy 2 tsp Coconut oil 1/2 tsp Cumin seeds Few curry leaves 1 slit green chilli ( for spicier gravy ) 1 big Onion/1.5 cups chopped shallots Salt needed 1 tsp Ginger Garlic Paste 2 Tomatoes 2 pinch Turmeric powder 3/4 tsp Coriander powder 1/2 tsp Chilli powder 1/4 tsp Black pepper powder 1/4 tsp Garam masala 1 tsp Tamarind paste ( Optional ) Notes: Add chilli powder & Salt accordingly in marination & gravy so that the end product is balanced. Add 1 tsp Tamarind paste to the gravy if you like it a bit sour. Toss the clean banana leaf in heat so that it wont tear on folding it. Make pockets as needed. We like less spicy, so skipped Green chilli.
