This is my new FAVORITE recipe. It's honestly a game changer. Since going WFPB I haven't had a single crunchy cookie - until now. This has the same crunchy texture as a "real" cookie and you can easily modify the recipe to make a chocolate cookie or a vanilla shortbread version. I'm just so happy to have a crunchy cookie recipe on hand. And it only takes 20 minutes to whip together. These vegan, wfpb healthy cookies have no oil, no refined sugar and no syrups or processed ingredients. They are the perfect wfpb snack! I decided to make them with gingerbread spice mix but you can substitute that for whatever you like. These cookies are actually healthy and only requires 4 ingredients and a grinder or a food processor. And if you don't feel like waiting for them to bake you can make them into balls and you have the yummiest no bake energy balls! Cookie Recipe 1/2 cup oats 1/2 cup dates 1/4 cup almonds // or sub cashews 2 tsp gingerbread spice mix // or sub cocoa or vanilla Gingerbread Spice Recipe 1 tbs ground cinnamon 1 tbs ground ginger 1-2 tsp ground cardamom 1 tsp ground cloves How to 1. Grind all the cookie ingredients in a blender with a grinder attachment or use a food processor and pulse until the mixture starts to stick together. 2. Form the dough into balls and press flat on a baking sheet using a fork. 3. Bake in the oven for 10-15 minutes 150C DONE! Please leave a comment if you try them and let me know how it went!
