Corned Beef and Cabbage in the Instant Pot 2 – 4 pound corned beef brisket with seasonings 2 cup baby carrots 1 – 1 ½ medium to large onion, quartered 2 tsp dried parsley 2 bay leaves 3 Cups beef broth Layer into Instant Pot liner, broth, then meat, veggies and seasonings. Put the lid on and lock, be sure the regulator is on sealing, not venting. Set to High Pressure and 90 Minutes. Walk away! Once the cook time has passed allow pressure to release normally. Open regulator valve (turn to venting) and allow any remaining steam to escape. Open top and add cabbage which you quartered and any onions you may wish to add. Close pot set on High Pressure again and set cook time to 3 minutes. When cooking time is passed turn pressure regulator to venting to quick release the steam. Remove meat to cutting board and tent with foil to allow to rest for 5 minutes. Remove veggies to serving bowl and juices to serving vessel. Slice meat against the grain Serve and enjoy!
