A quick, flavour-packed winter dinner recipe that comes together in minutes. Perfect for lunch, dinner or tiffin! ⭐ Ingredients serves for 3/4 people 2 cups cooked basmati rice (cooled) 1 tbsp oil + 3 tbsp butter 2 tbsp green chilli + ginger + garlic (finely chopped) 1 small onion (finely chopped) 2 tomatoes (finely chopped) ½ cup cauliflower (fine chopped) ½ cup cabbage (fine sliced) ½ cup carrot (fine chopped) ¼ cup green peas ¼ cup capsicum (fine chopped) ¼ cup French beans (fine sliced) Spices 2 tsp pav bhaji masala 1 tsp Kashmiri red chilli powder ½ tsp turmeric ½ tsp cumin powder ½ tsp coriander powder Salt to taste ⭐ Method 1. Heat oil + butter on a tawa. 2. Add green chilli, ginger & garlic — sauté 2 mins. 3. Add onion + salt and sauté until soft. 4. Add tomatoes, mash lightly and cook open (no cover). 5. Add cauliflower, cabbage & carrot — mix and cook covered 3 mins. 6. Make space in centre, add green peas, capsicum & beans + 2 tsp butter. Cover 2 mins. 7. Add turmeric, cumin, coriander powder and mix well. 8. Marinate rice separately with pav bhaji masala + red chilli for 5 mins. 9. Add marinated rice to the tawa, toss for 2 mins. 10. Finish with 1 tsp butter.
