Ingredients: 1 1/2 cups grated zucchini 1 cup sugar (your choice) brown or white, we are going to try brown next batch 2 eggs, lightly beaten 1/2 cup vegetable oil or olive 1 1/2 cups flour 1 tsp. baking powder 1/2 tsp.baking soda 1/4 tsp. salt 3/4 tsp. cinnamon 1/2 cup chopped walnuts (also try fresh fruits or raisins to your preference) Directions: Mix in a large bowl, zucchini sugar and eggs, add vegetable or olive oil and mix well. In a separate bowl, stir together flour, baking powder, baking soda, salt and cinnamon. Stir into zucchini mixture. Mix in walnuts in pieces. Pour into loaf pan. Bake at 325 degrees for 1 hr +- 10 min. remove from pan, let cool, makes 1 loaf. With the size of zucchini we used it will make 3 loafs depending on how deep you fill the pan and how much you adjust the recipe. As a extra note we have noticed in our neck of the woods, the zucchini size at the local super markets or grocery stores are smaller than what we grow. This is a summer treat for us, we won't buy the ones at the local stores, to us it isn't worth it, we would have to buy four to measure up to ours.
